The Big Apple Pie


  • 2 cups walnuts
  • 5 fresh Medjool dates, pittted and soaked until soft
  • 1 teaspoon cinnamon
  • 1/4 teaspoon of sea salt


  • 7 apples, a medley of granny smith and gala
  • 3 Medjool dates, soaked
  • 1/4 cup of ground flax seeds
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon ground cloves
  • 1 teaspoon cinnamon
  • 1 teaspoon flax oil

Combine the walnuts, dates and cinnamon in a food processor.  Process the crust ingredients until well combined, and resembles a graham cracker crust.  Press the walnut mixture into an  8 inch pie plate and set aside.

Combine all but one of the apples (setting it aside for decorating the top), dates and spices in a food processor.  Depending on the consistency you like you can process until well incorporated but with a bit of texture.  Fill the pie crust with the apple filling.  Decorate the top of the pie using sliced apples in whatever pattern or design you like and sprinkle with a bit of cinnamon.
