Energy Orbs

So simple and so delicious.  A great post workout snack that is gluten free, vegan and cleanse friendly.  Feel free to play around adding different types of nuts, and dried fruit to create your own perfect pick me up snack or delicious dessert.

  • 2 cups almonds
  • 1 cup Medjool dates, pitted
  • 1 cup dried apricots
  • 2 Tbsp agave nectar
  • 2 Tbsp dried coconut
  • 1/2 vanilla beans or 2 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 cup coconut

In a food processor, pulse the nuts until finely chopped. Add the rest of the ingredients, reserving the 1/4 cup of coconut. Process until well combined. The mixture should be nice and sticky. Roll out 16 balls and coat in the reserved coconut and enjoy. Keeps nicely in the fridge for 7 days
