1 cup Almond or Soy milk 1 teaspoon apple cider vinegar 1 tablespoon ground flax 3 tablespoons water 1 1/2 cups all purpose flour 2/3 cup sugar 1/2 cup whole wheat flour 2 teaspoons cinnamon 2 teaspoons baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1/3 cup vegan margarine 1 1/2 cups chopped, peeled apples 1/2 teaspoon vanilla
Preheat oven to 350°F. Grease a 9 x 5 x 3 inch loaf pan.
In a cup glass measuring cup add milk and vinegar to sour and set aside. In a very small bowl mix the ground flax and water and let sit while you continue to combine the dry ingredients together. In a large mixing bowl, sift together flours, sugar, cinnamon, baking powder and soda, and salt. Cut in the margarine until mixture resembles coarse cornmeal. Fold in the apples until coated. Stir together the sour milk, flax mixture and vanilla and add to the dry ingredients, stirring until just moistened. Spread into prepared pan and bake for 50-60 minutes or until wooden toothpick inserted in the center come out clean.
